Below is a list of some bluetooth headsets compatible and not compatible with the PS3 also shows how well they work!!!
I just bought Nokia HS-26W, so better be good :D
I will try and keep this updated, but have kinda slacked a bit since getting a ps3 myself. Thanks for looking and contributing!

Cardo Scala 500 - No problems, no re-registration/pairing, as long as 1 device at atime
Cardo Scala 700 - NO reregistration issue, can pair with both phone and PS3 and toggle b/t the two

Jabra 250 - works but re-registration/pairing issue
Jabra BT 125 - works "great", specifically known to work in fight night and Resistance. NO re-registration. i person noted connectivity issues

How to use your Bluetooth headset!
You have to set the BT headset up before you start the game. You do it under ' add an accessory' under the XMB , far to the left. The PS3 will start scanning for it. Make sure your BT is in the correct mode, as this stumped me for a bit. There is a difference, at least for mine, between 'on' and 'registering mode'. Your BT should come up, but you will have to enter your passcode. This should be included in your BT manual. If not, the most common ones are '0000' or '1234'. Then make sure under your microphone/audio settings (under XMB again) that the BT is set for input and output. Here you can also test the mike levels (you'll see the bar move when you speak).
It depends on what type of game you are playing. If you play deathmatch, you will hear other people, but this is only when L3 is pressed by them (you will also see their name and a microphone icon appear in the bottom right corner). If you want to talk, you have to hold down L3, but your name won't show up. If you are playing a team game (CTF), you do not have to hold down L3 to talk to your teammates, just speak. It makes it much easier. I am not sure though if you do hold down L3 if the opposing team hears it (global).
